This late and demanding grape variety requires warm and filtering soils. Gravelly soils are well suited to its good development, as they concentrate the heat of the day and release it at night. Cabernet Sauvignon needs heat throughout its development until autumn to optimize the quality of its tannins.
The cabernet sauvignon grape variety often has an intense and dark color. It will keep its purplish reflections for a while. The ripe Cabernet Sauvignon develops aromas of spices, black fruits and especially blackcurrant. Widely used in the Médoc and the Graves, it brings structure and aptitude for ageing.
