Tartaric acid

It is the main acid present in wine. It comes from the grape. Tartaric acid has the property of activating salivation. A large part of the tartaric acid precipitates during the maturing of the wine and is eliminated with the lees. The rest can form, under the action of the cold, shiny crystals visible under the cork and at the bottom of the bottle.
