At the end of the vatting process, after draining the free-run wine by gravity, the pomace (the solid parts of the grape) remains in the vat.
The marc still wet must be loaded into the press. The pressed marc gives the press wine.
The loading of the marc into the press is done manually in small and medium sized farms (you have to enter the tank with a fork).
It is also called “décuvage”.
